In June 2025, the Novosels chose a bold new direction: bringing all their concepts together into one unified destination — a multi-year project built around immersive spaces, family-friendly entertainment, and their signature Crafted Experience.
Nova Cellars is where it all began. What started as a garage winemaking experiment in 2007 — inspired by a road trip to Presque Isle with Uncle Dave — became one of western Pennsylvania’s most beloved craft wineries. Walt and Katie Novosel built Nova Cellars on the belief that wine doesn’t need to be intimidating. Whether you’re a lifelong enthusiast or picking up your first glass, there’s something here for you. Twelve-plus handcrafted wines range from bone-dry traditional varietals to the sweet, fruit-forward blends that put Nova on the map — wines like the Concord, the Niagara, and the legendary Dragon. Set in a Tuscan-inspired atmosphere overlooking a two-acre pond, Nova Cellars is the anchor of The Property in Pulaski, PA. Pair a bottle with flatbread or a charcuterie board, pull up a chair by the water, and stay a while.
Brew 32 is Walt Novosel’s love letter to sports — specifically to the vintage, black-and-white era of American athletics when the game was played for the love of it. Named for the number Walt wore in his baseball days (high school, college, and professional ball), the brewery is wallpapered in 1900s sports imagery that makes you feel like you’ve stepped into a century-old dugout. The beers match the personality: bold, creative, and unapologetically American. From traditional stouts and crisp lagers to Belgian Dubbels, West Coast IPAs, shandies, and the notorious Jalapeño Mango — there’s always something on tap that surprises. Brew 32 sits pond-side at The Property, making it the perfect spot to grab a flight, watch the water, and argue about whether anyone alive today could hit like Honus Wagner.

Knockin Noggin starts with an apple — and a bit of gravity. Themed around Isaac Newton’s famous moment of discovery under the apple tree, Knockin Noggin is Nova’s hard cidery, built on the idea that the best things in life fall right into place when you’re paying attention. Walt launched the cidery in 2014 in the historic Volant Mill before outgrowing it and expanding into the Meeting House next door. The ciders took off — eventually reaching distribution across western Pennsylvania — and a relocated version of Knockin Noggin found its home at The Property in Pulaski, right alongside the winery, brewery, and distillery. The Medieval-themed tasting room is one of the most visually striking on the property. Expect ten-plus rotating seasonal ciders: from the sweet Strawberry and Raspberry to the crisp, semi-dry Inertia and Velocity. Pair with a rice bowl and let something good knock you sideways.
Scallywag Distilling every great story has a villain — and at Nova Destinations, that’s Scallywag. Added to The Property in 2021, the pirate-themed distillery is tucked into the woods at the edge of campus, accessible by a walking trail that makes the journey feel like an adventure before you even arrive. Step inside and you’re on a pirate ship: dark wood, nautical rigging, treasure maps, and the kind of atmosphere that makes spirits taste better just by existing in it. Scallywag earns its craft credentials too — spirits go through a 4-5 times distillation process, carbon filtration, and reverse osmosis, with local ingredients sourced whenever possible. The result is a lineup of handcrafted spirits that are smooth, complex, and worth finding. Walk the plank. You won’t regret it.
